Poisoning – Food

Notes
  • Illness caused by eating food contaminated with infectious organisms or their toxins, poisono.
  • It starts 4-36 hrs after ingestion of food.
Symptoms
  • Symptoms are to some extent determined by the causative agents.
  • The following are the common symptoms of most poisoning cases:

*Fever

*Nausea

*Vomiting

*Diarrhoea

*Abdominal pain and cramps

  • The following are specific symptoms and treatment of selected food poisoning cases:

Escherichia coli

*Hemorrhagic colitis

*Antibiotics.

*Rehydration

b.          

Salmonella , Shigella and  Campylobacter jejuni

*Fever

*Chills

*Bloody

 Diarrhea

*Antibiotics.

*Rehydration

c.           

Clostridium botulinum

*Optical symptoms that include: blurred vision, sensitivity to light, double vision and paralyzed eye nerves.

*General weakness

*Paralysis

*Respiratory failure

*Dealth

*Antibiotics.

*Antitoxin (within 72 hrs)

*Rehydration

d.          

Mushroom poisoning

(mainly Amanita phalloides)

*GIT disoders

*Muscarinic symptoms such as miosis, bronchorrhea, bradycardia and wheezing.

*Delirium

*Psilocybe genus cause hallucination

*Optical Disorders

*Cardiac, hepatic  and renal disorders.

*Death

*Rehydration.

*Atropine inj. to treat muscarinic action.

*Benzodiazepines in case of poisoning by Psilocybe genus

Diagnosis
  • Clinical
  • Stool culture
  • PCR (when available)
Management
  • Majority of cases resolve spontaneously but few cases require hospitalization.
  • See the above table for specific treatment
  • Rehydration (ORS and IV fluids).
